My Upside Down Apple Tart

The idea is this is made upside down and then flipped over at the end. Apparantly this was discovered by accident after the cooks (the ‘Tatin’ sisters, after which the tart is actually named) overcooked the apples and had to add the pastry on top in the saucepan before putting the saucepan in the oven.

So here it is:

Get five apples and cut them in quarters and then in thirds of the quarter so you have twelve pieces per apple.

Squeeze the juice of an orange, grate the rind, add four tablespoons of sugar, and cardamom seeds and heat in a saucepan.

Add the apples and mix for a couple of minutes.

Get a baking tray and lay your apple pieces to cover the tray. Then lay over the apples with puff pastry

Put in the oven for approximately thirty minutes.

Take out and flip over your apple tart, sprinkling sugar ontop if desired
